olive cuttings are practiced in winter, in January or February, taking vigorous branches about 2-3 cm in diameter, and about 20-30 cm long; the branches are planted in a soil consisting of sand mixed with little peat, and the substratum is kept damp until new shoots are seen on the branches; they are buried very deeply, so for at least ten centimeters. Generally many cuttings are prepared and lesi immerses in the rooting hormone before placing them in the ground; the rooting hormone is a product easy to find in nurseries, which can be found both in powder and liquid form, it is used to stimulate the production of roots by those parts of the branch that are already well lignified, giving you some more probabilities that the plants can sprout. Plants obtained from cuttings are grown in pots or in allotment for at least a couple of years before being planted.
In fact most of the Italian olive groves are prepared by planting grafted plants, because it often happens that the plates obtained from cuttings are more delicate than those obtained from seed, so they often produce a less vigorous, and more superficial root which suffers more than drought.
Therefore in general the olive groves are prepared with plants already grafted, or with plants obtained from seed, which are then grafted when they are still young, but when they have already at least some years; in this way we obtain more vigorous and healthy plants, and also choose the variety of olives to be planted.
In fact, since you will have to uproot some of your trees ruined by frost, you can try to produce many cuttings with the resulting wood, even if the greater cost of the plants obtained by grafting seed plants is well motivated, as these plants are more luxuriant and vigorous plants obtained from cuttings.
